Visa requirements for "independent professionals"

My husband, two children (14 and 10) and I are all American citizens looking into relocating to Portugal. I am a business author and independent consultant, self-employed for 20-some years. My husband is a video production and streaming specialist with a regular full-time job that he would leave if/when we leave the US. 

I'm trying to fully understand all options for pursuing a Permanent Residency Visa, including the Golden Visa route as well as the traditional routes for obtaining a Type 1 Visa. Because I'm self-employed and specialize in entrepreneurship, it seems I could qualify a few different ways but I haven't yet found clear requirements/definitions for criteria like "to establish themselves as independent professionals in their field."

I'm in my early 50s and expect to continue my writing and consulting work for several years, and I'm open to opportunities to work or invest within the start-up world. That said, I don't envision starting a company that would create 10 jobs or otherwise go down "Startup Visa" route. I'm not 100% ruling that out, but I'm more inclined to continue my work as a business writer and consultant, and would like to use my time in Portugal to develop my expertise in international business as well as my other research interests. I'm not really motivated to pursue a PhD but that's an option as well.

Compared to many in this forum I am more at the beginning of my research and wondering if it's a good idea to call a consulate or a firm to ask questions about specific requirements. If so whom should I call? I'd like to sketch out a plan to make this happen within the next year.
