Moving to Edinburgh in 2019... I need clarification!

I've been researching what all needs to be done to move to Scotland, and I am very confused. Some websites say you have to have a work visa before you can even apply for a job because you won't get hired otherwise, and then other sites say that some jobs will sponsor my work visa. Which is it, and how hard is it to get sponsored?

My other question:
My fiancé, our 2 year old son and myself are going to be making the move. Say I'm the only one who gets a work visa for whatever reason... can we all still go to live or do we both have to have a work visa?
