US to UK career path with US degree

Hello, everyone. I've got many questions, but I'm going to limit myself to those concerning working in the UK for this session. (I'm counting on input from pallega, but any input is certainly welcome.)

I have dual citizenship: by birth in the US, and by descent in the UK, so no trouble there. I'm married, with two small children, and I'm halfway through a Bachelor's degree in Business. What I'd like to know is: Is an American degree worth less in the UK? And which would potentially be more beneficial in the way of employability, a degree in Economics, or in Finance? How can I maximize my employability between now and the time I graduate?

My spouse would likely be staying in the home, caring for our children, so we'd be a single-income household. What is a respectable salary? I can't seem to pin anyone down to answer that one. I KNOW it's very subjective. I just want to know what a single-income salary would have to be for a family of four, so that they don't have to worry about bills-no extravagant lifestyles here.
