Malaria, yellow fever, etc.

Being from Alaska (where the unofficial state bird is the mosquito), I'm no stranger to these annoying little pests, but, in researching Central and South America, I've seen many reports regarding the diseases these things carry down south.

I know official reports can exaggerate (to be on the "safe" side), so how worried should we be about these diseases?

My family (we have 2 young children) and I use essential oils - no chemicals (i.e. DEET) - to deter pests.

Along the same vein (though spread by contaminated water and/or food), are there any significant reports of cholera and/or typhoid, etc.?
