Where's the best Temperate Climate

Hi, looking for the best temperate climate area of Nicaragua for expat living. We were there visiting last year for 2 weeks. Loved Granada and San Juan but they were both to hot and swampy for us 60yo Americans. Went to the eco/coffee plantation area of the north highlands, north of Matigalpa but we didn't know if there were any developed areas or if we had to start from scratch with an undeveloped piece of land. We're into small scale farming and owning/operating a b&b. We need to be at least 1500' above sea level for a more temperate climate and minimal mosquitoes. Any thoughts you have are welcome.
