Doing a Work Exchange in Saint Lucia with child... Many Questions

Hi everyone. I am doing a work exchange in Saint Lucia starting on the 16th. I am from New York. This is my first time doing long term travel outside of the US. I have traveled for leisure but never long term.

I will be traveling with my 11 year old daughter who I will homeschool while I am there.

I have a place to stay in Choiseul in exchange for working with the home owner with her personal business. She is from France but has lived there for about 5 years now and also has two children.

I was going to buy a one way ticket because even though I only plan to work with her until November 30th I do not yet know what country I want to go to after I am done there. Will I have a problem since I only have a one way ticket?

With regard to US Credit/Debit card, will I be able to use them there? If not, how easy is it to get an account there as someone who isn't a native and be able to wire transfer my funds from my US account or maybe even from Paypal into an account? I am an entrepreneur and work online, so I have income from the US. But all of my funds go into US based accounts.

Does anyone know of activities for children close to where this city is? Like swimming, singing, dance lessons?

Are there any homeschooling groups or communities that anyone knows of where I could connect with other homeschooled children or homeschooling parents?

As far as things to do for me as an adult, how far is where I will be from some of the places there are to connect with other expats?
