appointment with Consulate

I have booked an appointment with the spain consulate in SF next month but from what I have recently read, Maybe I need to reschedule it. My boyfriend lives in Spain and I fly back and forth visiting him. I wanted to start the paperwork and request long term residency just case he eventually asks me to join him and move there. I need some clarity regarding the process. Am I able to apply for this although I have no definite date to move there? Is it possible to start the process even though I have no idea of when it would be a good time to move there? To my understanding, you must give a date that are you moving there, once the paperwork is approved. I do not want to be embarrassed at the consulate appointment so please advise. Also, I would like to apply for work there because I think its better to have that security whether I plan on working there or not. Shall I keep my upcoming appointment ? Also my bf is a long term resident there as well. I currently reside in America. Please advise.
